Hotel St. Cloud’s new steak and seafood restaurant, 1887 Historic Eatery, and its cherished lobby will be open during a soft launch from Feb. 6-11.
Finishing touches on phase two of the historic hotel’s renovation project are just days away from being complete.
“We wanted it to be something that Cañon is proud of, a piece of their history,” said Stan Bullis, president of Unbridled, who purchased the hotel from the auction block in July 2018.
Open for breakfast and dinner, 1887 will seat 70 patrons inside the restaurant and 30 in its outdoor dining area. Their menu “pulls from 19th-century frontier favorites paired with locally inspired culinary and ingredients.”
The dinner menu includes upscale appetizers, soups, salads and entrees, including a variety of seafood and certified Angus steaks. Breakfast items include steak and eggs, omelets, Belgian waffles, pancakes, mimosas and much more.
Reservations are required during the soft launch and highly recommended moving forward by calling 719-602-3469. Breakfast begins at 7:30 a.m. with dinner starting at 4 p.m.
Those who have a dinner reservation at 1887 are invited to access the War Room, a high-end cocktail lounge located behind a covert bookcase. The War Room opens to the general public at 8 p.m.
The decor in 1887 is comprised of books and artifacts from about 1860 to 1920. Those who have artifacts that need a new home, especially those from the area, may email Jenny Farr at jtfarr@unbridled.com.
Unlike the historic hotel, bar, restaurant and lobby, the kitchen is brand new. It has two service lines, one for 1887 and one for catering, which is offered to the public.
The Hotel St. Cloud’s bar, Fremont Public House, opened just about a year ago and continues to operate from 4 to 9 p.m. Thursday through Saturday. Patrons are invited to tour the newly renovated lobby and restaurant.
“We wanted it to feel like frontier, but refined,” Bullis said. “The hope is that it will be a gem for people to be proud of.”
Fremont Public House, the St. Cloud’s lobby and 1887 are available for private events.

Bullis and his staff have been pulling from Fremont County’s talent pool to add decorative touches to the hotel and restaurant.
Jeff Dunn of Penrose Furnishings rehabbed the original bar for Fremont Public House and did all of the hotel’s woodwork. Murals are painted by local artist, Glenn Norberg. Bullis also is looking for individuals to play live music in the lobby from 4 to 7 pm. Thursday through Saturday evenings. For more information, email lclark@fremontprovisions.com.
The last phase of the Hotel St. Cloud project will be the actual hotel, which is expected to open in late 2024 or early 2025 with 36 newly renovated rooms.
The entire renovation project was expected to be about $8.8 million, but once workers began to peel back layers of walls and panels, they discovered the structure was unsound. The cost shot up to about $15.6 million.
“The entire facility is brand new structurally, mechanically and electrically and plumbing,” Bullis said. “Even though it looks old, it’s basically a brand new building on the inside, preserving the history on the outside. Even on the inside, it still feels like the St. Cloud.”
Unbridled is expected to have about 50 jobs available between the hotel, bar and restaurants – 1887 and Fremont Provisions, located at 507 Main St.
