Juan Padro building new Jefferson Park Detroit-style pizza joint, Redtop Rendezvous
Juan Padro is building his first restaurant from the ground up.
The owner of Culinary Creative restaurant group has teamed up with Michael Griger and Michael Moylen of local home builder Mag Builders to construct a new concept at 2917 W. 25th Ave. in Jefferson Park.
“(Mag Builders) are friends of investors in Forget Me Not, and they had this piece of land here, and we’ve talked about doing something together for a while,” Padro said. “It just made sense to align the real estate and the business on this particular deal.”
Padro and Mag Builders, along with Culinary Creative co-founder and chief development officer Kevin Eddy, hope to open the restaurant, dubbed Redtop Rendezvous, before the Broncos’ season in August.
Redtop Rendezvous will be a Detroit-style pizza joint. It’s an ode to Eddy’s hometown, where he grew up eating rectangular pizza topped with marinara and a thick, crispy crust, also known as “redtops” in Detroit, he said. It will also serve wings and burgers.
“Detroit pizza is the only pizza I knew growing up,” Eddy said. My first job in this industry was as a cook at a place where we made Detroit-style pizzas and burgers. Being in this industry as long as I have, I’ve always wanted to take a little bit of my childhood to Denver.”
Compass Realtor Josh McKinley, who introduced the team to each other, is also a partner on the project. Padro said the five partners are splitting the business evenly between them.
Mag Builders purchased the empty 3,021-square-foot lot in Jefferson Park for $525,000 in 2017, according to property records. Although the duo has never built a commercial property before, they saw this deal as a good place to start.
“We’re excited to be part of the restaurant, and we want to make something very unique,” Griger said. “It’s our first time building a restaurant, so we want to add a wow factor.”
“If this works as well as we all think, we want to continue to get more involved in the industry,” Moylen added.
Mag Builders broke ground on the two-story, 4,600-square-foot restaurant in February and expect to complete it in August. They’ve hired RealArchitecture to design the space, which will include two bars on each level and a rooftop patio.
“I love being able to work with friends and do something that’s fun, and hopefully very profitable for everybody,” Padro said. “I think everyone has been invested in one another’s success in one way, shape or form for a number of years now. And I’m pumped to see Kevin get his concept going.”
Padro is also getting ready to open a second Mr. Oso location at 103 S. Ogden St. in Washington Park, plus a pared-down version called Osito in Arvada’s newest food hall, Freedom Street Social, in July.
The local restaurateur also plans to open a new cocktail bar in Cherry Creek and his new breakfast concept in the Highlands in October. And he’s working on opening three concepts in Denver International Airport mid-next year.
